The perfect time to try it every way possible. Grilled, poached or baked? That's the tried-and-true classic. But have you ever tried preparing it using the sous vide method? What Temperature and How Long to Cook Asparagus Sous Vide?
Asparagus is prepared using the sous vide method at 85 °C for 12–15 minutes. Thinner stalks need less time, thicker ones need a few extra minutes. The result will be perfectly tender asparagus full of flavour.

Recipe: Sous Vide Asparagus with Butter and Herbs
Ingredients:
- green or white asparagus
- butter or olive oil
- salt and pepper
- a clove of garlic
- lemon zest and lemon juice
- fresh thyme or tarragon
- a zip lock bag
- Lauben Sous Vide Stick SV01
Method:
- Wash the asparagus and snap off the woody ends.
- Place it in the bag together with a slice of butter (or a tablespoon of olive oil), sliced garlic, a little lemon zest and a sprig of thyme.
- Season with salt and pepper.
- Fill a pot with water, submerge the Lauben Sous Vide Stick SV01 and set the temperature to 85 °C.
- Once the water reaches the desired temperature, place the bag with the asparagus in and cook for 12–15 minutes depending on the thickness of the stalks.
- Once done, drizzle with fresh lemon juice and serve.
