Winter Soup 3 Ways

Creamy Garlic Soup 

Ingredients (4 servings): 

  • 100–150 g garlic (depending on how strong you like the flavor) 
  • 3–4 tablespoons butter 
  • 3 tablespoons all-purpose flour 
  • 1 l chicken or vegetable stock 
  • 250 ml heavy cream 
  • Salt and white pepper 
  • A pinch of nutmeg 
  • Bread or crispy croutons for serving 

Instructions: 

  1. Peel and finely chop the garlic. 
  2. In a pot, melt the butter and briefly sauté the garlic until fragrant, but not browned. 
  3. Add the flour and quickly make a light roux. 
  4. Gradually add the stock, stirring to prevent lumps. 
  5. Once the soup is smooth and heated through, stir in the cream and season with nutmeg, salt, and white pepper. 
  6. Serve with croutons or pieces of toasted bread.

French Onion Soup 

Ingredients (4 servings): 

  • 1 000 g onions 
  • 1 200 ml chicken stock 
  • 160 g Gruyère cheese (or another quality cheese) 
  • 1 tablespoon sugar 
  • 1 tablespoon all-purpose flour 
  • 40 ml wine vinegar 
  • 100 ml dry white wine 
  • 2 bay leaves 
  • 2 sprigs fresh thyme 
  • A few drops of brandy (optional) 
  • Salt and pepper to taste 
  • Toasts or baguette for cheese topping 

Instructions: 

  1. Peel and slice the onions into thin crescents. 
  2. Slowly sauté the onions in butter with a little oil over low heat — this is key for the sweet, caramelized flavor. 
  3. After about 40–45 minutes, sprinkle in the sugar and let it caramelize. 
  4. Add the wine vinegar and white wine, and simmer briefly. 
  5. Sprinkle the flour, stir briefly, and then add the stock. 
  6. Add the bay leaves and thyme and let the soup simmer for about 20 minutes to allow the flavors to blend. 
  7. Add a few drops of brandy, if desired, and season with salt and pepper. 
  8. Serve with crispy toasts or baguette topped with cheese and baked until golden brown.

  • 500 g smoked ribs 
  • 3 potatoes 
  • 1 onion 
  • 200 g sauerkraut

  • 1 teaspoon sweet paprika 
  • 3 whole peppercorns 
  • 2 bay leaves 
  • A pinch of sugar 
  • Oil 
  • Crushed caraway seeds 
  • Salt and ground pepper to taste 

Instructions: 

  1. Finely chop the onion and sauté until golden. 
  2. Add the chopped potatoes, sauerkraut, and pour in the stock. 
  3. Add the smoked ribs and spices: bay leaves, whole peppercorns, sweet paprika, and caraway seeds. Taste and adjust with a pinch of sugar, salt, and pepper if needed. 
  4. Cook until the potatoes and sauerkraut are tender and the flavors have melded together. 
  5. Serve hot with fresh bread.
