Slow-Roasted Goose with Apples and Honey

Do you enjoy traditions but don’t feel like spending the whole day cooking? St. Martin’s goose may take time, but with the help of slow cooking, you can make it with almost no effort. 

We’ve prepared one of the more original takes on this classic – a recipe that combines traditional flavor with a modern approach. Use goose legs or breasts for this slow-roasted goose with apples and honey; slow cooking keeps the meat tender, juicy, and wonderfully aromatic. 

Slow-Roasted Goose (Serves 2) 

Ingredients: 

  • 2 goose legs or 2 goose breasts 
  • 2–3 apples, diced 
  • 2 tbsp honey 
  • 1 onion, finely chopped 
  • salt and pepper 
  • herbs to taste (e.g. thyme, rosemary) 

Instructions: 

  1. Rinse and pat dry the goose meat, then season with salt and pepper. 
  2. Prepare a mixture of apples, onion, honey, and herbs. 
  3. Place the meat and the mixture into the Lauben Slow Cooker 3500SB
  4. Set to slow cook for 6–8 hours. 
  5. Once done, remove the meat and reduce the remaining juices into a sauce if desired. 
  6. Serve with your favorite sides. 

 

Red Cabbage with Apples 

Ingredients: 

  • 250 g red cabbage 
  • 1 apple, peeled and diced 
  • 1 onion, finely chopped 
  • 1 tbsp olive oil 
  • 1 tbsp apple cider vinegar 
  • ½ tbsp sugar 
  • salt and pepper 

Instructions: 

  1. Heat the oil in a pan and sauté the onion until golden. 
  2. Add the cabbage and sauté briefly. 
  3. Stir in the apple, sugar, and vinegar, cover, and simmer for about 20 minutes until tender. 
  4. Season with salt and pepper. 

 

Potato Flatbreads (Lokše) 

Ingredients: 

  • 250 g boiled potatoes 
  • 75 g all-purpose flour 
  • pinch of salt 
  • butter for brushing 

Instructions: 

  1. Mash the boiled potatoes and combine with flour and salt to form a smooth dough. 
  2. Divide into 4–5 portions and roll out thin flatbreads. 
  3. Cook on a dry pan for 2–3 minutes on each side until golden. 
  4. Brush with butter and serve warm.
