Sous Vide - How it works

What will you need?

To achieve perfect results in the kitchen with the sous vide method, unlike in the past, all you need is the Lauben Sous Vide Stick. Then you will only need any container filled with water in which you place the cooker, and special zip-lock bags for the prepared dish, which are included in the package.

Preparation

One of the greatest advantages of Sous Vide cooking is that the preparation of food before the actual cooking takes almost no time. For most ingredients, salt and pepper will be enough, and you will achieve perfect flavor and texture thanks to the method of preparation itself. You don’t need to marinate the meat or add fat, because thanks to slow cooking under vacuum, it remains juicy on its own.

You simply switch on the cooker, set the desired temperature, and immerse it into a pot with food vacuum-sealed in bags. Once it is done, the cooker will notify you, and you can just enjoy the fabulous result.

Cooking Time and Temperature

The secret to perfect results with the Sous Vide method lies in setting the correct temperature and cooking time. These two factors are the alpha and omega of Sous Vide cooking, as the final texture and flavor of your dishes depend on them. By choosing the right cooking temperature, you can achieve your preferred level of doneness with almost frightening precision. Setting the cooking time is an equally important part of Sous Vide preparation, because food must be cooked long enough to reach the desired temperature.

Now you know what matters most in Sous Vide cooking, but you may be wondering at what temperature and for how long to prepare your steak. Every Sous Vide recipe should include the correct temperature and cooking time, so you don’t have to worry about lengthy searches on the internet or in cookbooks. For better orientation, you can also rely on our temperature and cooking time tables.

And Now for the Grand Finale

Although food prepared using the Sous Vide method is ready to serve immediately after being removed from the water bath, you can enhance your dishes even further by quickly searing or frying them. This will give them even better flavor and texture. BBQ ribs or lamb chops can be left to brown and crisp up for a short while on the grill after being taken out of the Sous Vide bath. And what about fries? There’s nothing better than preparing homemade fries from real potatoes in a Sous Vide bath and then giving them a few more minutes in a deep fryer with high-quality oil.

Unlike large appliances and kitchen robots, with the Lauben Sous Vide Stick you don’t have to sacrifice an hour at the sink to achieve a perfect result on your plate. The pot in which you prepared the food only needs a quick rinse, since the ingredients were sealed in a zip-lock bag. The cooker itself can then be cleaned just as easily as, for example, a hand blender.
